I really can't give you numbers (I don't think anyone keeps track, or to be honest who would you keep track) and burnout means different things to different people. I personally in 9 years of working in games have only ever seen 1 person leave the entire industry because they had had enough. I have seen many people change the types of games or content they are working on, and I personally make sure that, to the best of my ability, I let people on my team work on as many different things as they are interested in. I think a sure fire way to burn people out is to have them working on the same thing (say modeling hands) over and over again for years. This will kill production and morale in a heartbeat.
The best analogy is framers planting the same crop in the same soil over and over again, sooner or later the crop fails because its pretty much leached the soil dry.
