Back You'll have to add a bitdepth operator right after the File Input node.
Everything below will now be in 16-bit. If you bring in a second file and 'over' it on top, the larger bit depth will be used.
Operators always process by default in the greater bit depth of all their inputs, and output that chosen bit depth. That is what the 'Default' setting for Output Depth tab will do.
The fxviewer shows you at the top left what the bitdepth of the current image is so you can tell it's working.
The file browser, in thumbnail mode, can be used to check if the file you've written to disk is indeed 16-bit.

My source is 8 bit, but the result needs to be 16-bits, not just the output file, but the processes need to be 16-bit. So if for example, I blur the heck out of a big white circle, I will have 16-bit greys not 8-bit. So everything up to the output is handled as 16-bits regardless of the source depth, and not I am not just putting 8-bits of RGB into a 16-bit image?
