When you save and reopen a scene file, it doesnt show the vertex
colours. If you baked you need to set the custom poly display options
to emission and apply to all. One sure way of seeing if the vertex
colours have really disappeared is to look at the RGBA values of the
verts in the component editor. If they are there then it's a display
thing..resolved as previously stated.
