Well I'm not an expert at either technique, but I was much more
successful at getting
the curves I wanted for a model I recently worked on using the NURBs
tools in TrueSpace.

I wasn't going for organic, I was going for bent wood and metal (very
smooth, complex curves).

My intent was not to stay in NURBs though.  I wanted to convert it back
to polygons, which
turned out to be what I spent more time on.  Once back in polygons I
unioned and UV mapped
and did all the stuff you would normally do.

The main thing was that it seemed easier to deform the surface and shape
it how I wanted and then
convert the surface with the NURBs control points than with the sculpt
and deform tools.

Since I wasn't already an expert with the other tools, NURBs ended up
being easier for me.
