Wow, a giraffe! What a challenge. :)
There are two approaches/parts to smoothing in the VM, the first is with what is called "Smooth Edges", and the second one is "Subdivision Smoothing" (which is similar to the one in Hexagon and somewhat, AMAPI).
They, for the most part, work together whereby you need to highlight the area which you want to smooth and first select "Selection > Smooth Edges" and hit "okay" to the default "Angles less than..." setting of "50.00". The go over to the Properties Tray tab and go to Model > Selection > Subdivision > Smooth, and set your Subdivision Level between 1 to 5 depending on the smoothness you desire. You should then see that part of your model as being smoothed.
Now one big thing that is MISSING in Hexagon that the VM does rather nicely is just what I mentioned above: you can actually make *selections* of the areas that you want smoothed, while leaving other areas creased. I really hope that this is something that will migrate over to Hexagon [actually, I don't think even AMAPI had this capability (?)]. That would really make Hexagon fly. :)
