I generally render in DV format size, uncompressed individual frames.
(the advantage is that with a bit of care, you can fix a bad spot in
an animation without having to redo the whole render).

My normal output medium is DVD, so the results of the project are
saved that way.  I can (and do) often keep the uncompressed files on a
dvd-r/dvd+r.  With saving the project edits, I can rebuild most of the
stuff needed.
