Hi Simon,
I am actually venturing into UV mapping myself but frankly, I've done some Google searches recently and it seems that the links that I was first introduced to UV mapping are no longer active. :(.
But here are some links that I did find that hopefully will help you become familiar with the basic technique(s):

2) <http://www.uvmapper.com/>
3) <http://www.unwrap3d.com/>

Well, hope these help you at least to get oriented to the conept of UV mapping. As far as doing UV mapping in Carrarra, you can use Carrara and Photoshop to start out, but for ease of use sake and really good results, people have been using UV painting apps. such as ZBrush, BodyPaint, and Deep Paint 3D/ Deep. But just the same, if you know how to use the tools, Carrara's UV mapper and Photoshop can yield some really nice results without the high cost. Unfortunately I am just getting up to speed with Photoshop, so I opted to get my hands on a UV Paint app. just to save time/effort.
Well, if I do find any of my old UV mapping tutorials I wouldn't mind sending them to you. Just drop me a note with your e-address so I can keep it handy if any do surface. And if I find the time, I may be able to whip out a few JPEGs (or shockwave file) and send them to you on how to do your rust stains/spots with using Photoshop and Carrara's UV mapper.
Cheers.
