I use FreeHand (Mac) almost all of the time for this task and I get consistent results. Make sure you EXPORT the file selecting Illustrator 5.5 (or less) format. (I think C3 uses Illustrator 8 or less, but I haven't read that part of the manual yet.).
One thing I've had happen upon importing the file is that you might not be seeing it because the object might be huge and just not show in the Spline Modeler's view. Zoom outward and make sure the item isn't there before giving up. Also poke around the Assembly Room to see if the item is showing up there.

Maybe you have a hidden pixel-based image in the file before you export it? That's just a guess. EPS files can contain both vector and pixel-based components but Carrara can only accept vector elements in the Spline Modeler.
