Oh, yes you can, Andrew, but the Color
Gradient isn't the way to achieve what you
want to do. Use the Pattern Function Gradient
instead. Here's how:

In the color channel ...

Color: Operators: Mixer
-- Source One: First Color
-- Source Two: Second Color
----Blender: Operators: Curve Filter (new feature in C3!)
-- ---Shader for Blender: Pattern Functions: Gradient
-- ---- --(Set Gradient for Horizontal, zero Turbulence.

Now click on the graph icon for the Curve Filter and
create any sort of curve you want. You can have full
control of how the colors map onto the sphere.


If you would like to see some ways to use the new
Color Gradient, I prepared a page which shows a couple
of ways I've used it and shows the full shader tree which
you are welcome to copy:
