We use gaming cards almost exclusively and for the most part I don't
have any major complaints.  The biggest problem is that when you call
support, they'll always have an out, since you're not using certified
hardware.   Thus, we keep some certified cards floating around, so we
can prove our bugs aren't being caused by the gaming hardware.  
Currently, we have GeForce 5200s, GeForce 5600 Ultras, GeForce 5700
Ultras, and GeForce 6800's (vanilla, GT, Ultra and Go) in service.   No
7800's yet, unfortunately...  (The 5200s are on our farm -- I don't
recommend them for workstation work).  On the professional side, we have
a dinky Quadro FX 1000, which is a total dog and nobody ever wants to
use it.  That's anecdotal, but I haven't been led to believe that
professional cards offer any significant advantages over gaming
hardware, aside from the documented ones, which aren't that important to
us anyway.  In my opinion, the upgrade cycle on video cards is just too
rapid to justify spending all your money on one.  Unless it's such a
tiny part of your budget that it doesn't matter, you're better off
buying a cheaper card then upgrading later.

On the procs, I think an official answer to that was given recently, and
if I recall correctly, it was 1 license <=> 1 proc.
